Normally I really enjoy cooking, but during the hot summer months standing at the stove for hours just doesn’t sound the least bit appealing. On those days I usually resort to my favorite summer dish: a salad. It’s healthy, super easy to make and can be made with virtually anything you have in the fridge and can eat raw. My normal bowl includes tomatoes, cucumber, onions, peppers, a few types of cheese (Mozzarella, Feta, Gouda or squeaky cheeseĀ are wonderful but you can use whatever you prefer) and dicedĀ bacon/sausage . Top it off with homemade croutons (they’re perfect for using any leftover stale bread), season with olive oil, salt and pepper and you’re good to go!
